Wine and cheese from the Council of State for the year 2021

The Council of State’s new Vin d’Honneur will be Domaine de Autecour, AOC la Côte, owned by the Schenk family. The government has also awarded Gruyère AOP from the Grandcour cheese factory, which will be its Cheese of Excellence for 2021.

At the end of its meeting on November 4, 2020, the Council of State tasted four Premiers Grands Crus Vaudois and five Gruyère AOP pre-selected from fifteen samples.

His choice fell on the 2019 vintage of Domaine de Autecour, AOC la Côte, owned by the Schenk family. Produced by winemaker Michael Monnier and his team, and vinified by oenologist Thierry Ciampi, it will be, for the third time, the Vin d’Honneur of the Council of State for the year 2021, after having been in 2017 and 2018.

To accompany it during the same period, the Cheese of Excellence from the Government of Vaud will be Gruyère AOP from the Grandcour cheese dairy, produced under the supervision of cheese maker Jean-Daniel Jäggi. This Gruyère, like all its competitors, obtained an average of over 19 out of 20 points during the taxations between May 2019 and April 2020.

Taking into account the number of Premiers Grands Crus approved to date, that is to say twenty-one, the Council of State has entrusted an ad hoc tasting commission, led by Philippe Meyer, cantonal oenologist, to carry out a preselection. wines. For the rest, the conditions of the governmental tasting – blind and comparative – did not change, the state councilors personally chose the winning products. The cantonal oenologist made sure that it was carried out according to the rules of the art for the wines, while a quality controller from the Interprofession du Gruyère AOP did the same for the cheeses.
